Ingredients for 4 people
1 kg tomatoes
1 cucumber
1/4 green pepper
1 chilli pepper
1 onion
1 garlic clove
50 ml olive oil
Salt, pepper
Sherry vinegar
1 package (150 g) of Zottarella Minis Basil
2 tbsp. croutons, as desired
  1. Wash the tomatoes, remove the stems and chop into pieces. Peel and dice the cucumber. Wash the pepper and chilli, cut in half, remove the seeds and white inner skin and dice the halves. Peel the onion and garlic and chop into small pieces.
  2. Put the prepared vegetables and olive oil into a blender and purée. Season with salt, pepper and sherry vinegar. Let chill.
  3. Drain the Minis. Pour the soup into bowls and add the Minis. Sprinkle with croutons as desired.
