Ingredients for 4 people
300 g green asparagus
Salt
1 untreated lemon
300 g cocktail tomatoes
1 bunch of green onions
1 tbsp. pitted black olives
1 package (250 g) of Zottarella Roll Classic
4 salmon fillets (each 125 g)
Pepper
Olive oil for the pans
  1. Pre-heat oven to 180 °C with top and bottom heating.
  2. Wash the asparagus, peel the lower third and cut off the ends. Cut the asparagus into pieces. Cook in plenty of salted water for about 5 min. then drain.
  3. Wash the lemon under hot water, rub dry and cut into eighths. Wash the cocktail tomatoes and cut in half. Wash the green onions and cut into rings. Cut the olives into rings as well. Drain and slice the Zottarella Roll.
  4. Wash the salmon fillets, dab dry, season with salt and pepper. Brush the casserole dishes with oil. Salt the vegetables and place in the dishes with the lemon wedges. Place the salmon on top. Top with Zottarella slices and bake in the oven for about 20 min.
