2 onions 1 yellow pepper 2 red peppers 1 large zucchini 2 garlic cloves 4 tbsp. olive oil 3 tbsp. tomato paste 3 tomatoes 3 tbsp. red wine vinegar Salt, pepper Sugar 1 package (250 g) of Zottarella Roll Classic 4 sprigs of basil
Pre-heat oven to 180 °C with top and bottom heating.
Peel the onions, cut in half and then into strips. Wash the peppers, cut in half, remove the seeds and white inner skin and dice the halves. Wash the zucchini, cut in half lengthwise and slice. Peel the garlic and chop finely.
Mix 2 tbsp. olive oil with the tomato paste and mix well with the vegetables. Place in a baking pan and bake in the oven for about 15 min. Wash the tomatoes, remove the stems and chop into eighths. After 15 min. add the tomatoes to the vegetables and cook for another 5 min. until firm to the bite.
Place the cooked vegetables into a bowl. Mix together with the rest of the olive oil and red wine vinegar, season with salt, pepper and 1 large pinch of sugar. Let cool a bit.
Drain and dice the Zottarella Roll. Wash the basil, shake dry, remove the leaves and cut into strips. Mix both ingredients into the salad, season again and enjoy lukewarm.
