Zottarella avocado bruschetta

Ingredients for 4 people
1 ripe avocado
Sugar
2 tbsp. lemon juice
Salt, pepper
1 package (250 g) of Zottarella Roll Classic
3 sprigs of basil
8 slices of baguette
6 tbsp. olive oil
1 garlic clove
Mild paprika powder
  1. Peel the avocado, cut in half and remove the pit. Purée the fruit with 1 pinch of sugar and lemon juice and season with salt and pepper. Drain and slice the Zottarella Roll. Wash the basil, shake dry and remove the leaves.
  2. Toast the baguette slices on both sides in a pan with 4 tbsp. hot olive oil. Peel the garlic and rub onto one side of each baguette slice.
  3. Spread avocado paste onto the garlic side of the baguette, top with Zottarella slices and garnish with basil. Drizzle with the remaining oil, season with salt and pepper and sprinkle with some paprika.
