Ingredients for 3 people
1 small eggplant
Salt
1 medium sized onion
1 garlic clove
1 cm ginger root
2 sprigs of coriander
3 sprigs of parsley
1 package (250 g) of Zottarella Roll Classic
6 hamburger buns
4 tbsp. olive oil
1 tbsp. liquid honey
600 g mixed minced meat
1 tbsp. tandoori paste or tandoori powder

6 tsp. mango chutney
  1. Wash and slice the eggplant. Season with salt, let stand for about 15 min. and dab dry.
  2. Peel and dice the onion, garlic and ginger. Wash the herbs, shake dry and chop the leaves. Drain and slice the Zottarella Roll.
  3. Toast the buns in an ungreased pan and remove. Sauté the onions in 1 tbsp. hot olive oil until transparent. Add honey, caramelize and then let cool. Mix the minced meat together with the tandoori, onion, garlic, ginger and herbs. Season with salt and pepper, divide into 6 portions and shape into burgers.
  4. Fry the eggplant slices on both sides in the rest of the hot oil. Remove and keep warm. Finally, fry the burgers on both sides for about 15 min. Top the bottom bun with the burger, eggplant and Zottarella slices. Spread mango chutney on the top bun and place onto the burger.
