Strawberry wontons with lavender sauce

Ingredients for 6 people
Lavender sauce
1 vanilla bean
500 ml milk
1 tbsp. dried lavender
3 egg yolks
2 tbsp. sugar
1 tbsp. cornflour
Wontons
500 g strawberries
1 tsp. lemon juice
1 tbsp. honey
1 package (250 g) of Zottarella Roll Classic
30 wonton dough sheets for frying
Vegetable oil for frying
  1. Cut the vanilla bean lengthwise and remove the pulp. Bring the milk, lavender, vanilla bean and pulp to a boil, then let cool and pass through a sieve. Beat the egg yolks, sugar and cornflour until smooth and mix with the lavender milk. Continue to stir at low temperature until the sauce thickens, not letting it boil. Let the lavender sauce cool and chill in the refrigerator.
  2. Wash and quarter the strawberries. Marinate with lemon juice and honey. Drain and finely dice the Zottarella Roll and mix with the strawberries. Place 1 tbsp. of the strawberry-Zottarella mixture in the middle of each sheet of dough. Brush the edges with water and fold all four corners up together to form a little package.
  3. Fry the wontons in batches in plenty of hot vegetable oil for about 3-5 min. until golden yellow. Drain the excess oil on a paper towel. Serve with lavender sauce and garnish with a few fresh strawberries as desired.
